Eggplant and Fetta Balls

Makes 12 balls

Ingredients:

  • 1 medium eggplant
  • 1 lemon, juiced
  • 1 small brown onion, finely chopped
  • 100g fetta, crumbled
  • 1 tbsp parmesan, freshly grated
  • 2 slices stale white bread
  • 1 cup coarse breadcrumbs
  • 1 egg
  • Salt and freshly ground pepper
  • Oil for frying

Green Beans tossed in Roasted Hazelnut Taratoor

(Banquet dish as part of a shared meal for 4-8 persons)

1kg green beans, topped and tailed
300g hazelnuts, roasted and peeled
3 cloves garlic
30ml white wine vinegar
30ml cup lemon juice
1 cup olive oil
S + P
 50g extra roasted hazlenuts, peeled and roughly chopped, to garnish
Lemon wedges, to garnish

Greek Salad

(Serves 2-4 as a shared plate)

Salad Ingredients:
4 beautiful firm but ripe tomatoes, (I use yellow, orange and red roma tomatoes)
thinly sliced red onion (quantity of your choice)
handful of kalamata olives
handful of sliced cucumber
square of good quality fetta about 3cm x 3cm
dried oregano
salt and pepper

Makes 20 / 40
200g / 400g dark chocolate
20g / 40g unsalted butter
20 / 40 fresh dates
90g / 175g icing sugar
125g / 250g unsalted macadamias, ground
A generous pinch of saffron threads infused in 1 / 2 tbsp warmed milk
