Saffron Macadamia Chocolate Dates

Green Beans tossed in Roasted Hazelnut Taratoor

(Banquet dish as part of a shared meal for 4-8 persons)

1kg green beans, topped and tailed
Taratoor ingredients:
300g hazelnuts, roasted and peeled
3 cloves garlic
30ml white wine vinegar
30ml cup lemon juice
1 cup olive oil
S + P
 50g extra roasted hazlenuts, peeled and roughly chopped, to garnish
Lemon wedges, to garnish
To make taratoor: Blend hazelnuts in a food processor. Add garlic, vinegar, lemon juice and 60ml water and blend to a coarse texture. With the motor running, slowly add oil until smooth. If necessary thin out with a little warm water. Season to taste.
Blanch beans in pot of boiling water for a minute. Drain and toss with hazelnut taratoor. Adjust seasoning. Place dressed beans in a bowl, garnish with extra roasted hazelnuts and lemon wedges.
