Greek Salad
(Serves 2-4 as a shared plate)
Salad Ingredients:
4 beautiful firm but ripe tomatoes, (I use yellow, orange and red roma tomatoes)
thinly sliced red onion (quantity of your choice)
handful of kalamata olives
handful of sliced cucumber
square of good quality fetta about 3cm x 3cm
dried oregano
salt and pepper
Dressing:
1 finely diced shallot (small red onion)
1 clove garlic, crushed
1/3 cup red wine vinegar
1 cup good quality olive oil
Pinch of salt, pepper and sugar
- To make salad dressing, combine all ingredients in a large jug, except for olive oil. Using a stick blender or whisk, slowly drizzle in the olive oil so that salad dressing emulsifies.
- Slice tomatoes, in rounds, discarding the top and bottom and arrange on a platter, mixing all the slices so that the colours are combined. Lightly season the tomatoes.
- Over the top scatter the sliced cucumber, onion, then olives.
- Place the piece of fetta on top centre.
- Drizzle with salad dressing. Store remaining dressing in a screw top jar in the refrigerator. Will keep for at least a month or two.
